Our
company has always aimed to Biological and to top quality production (D.O.P.):
that is why the olives are cropped at the right ripen time, when still green,
and daily brought to the mill for the extraction. The oil is extracted in
cold working and no chemical solvents are used. The extra virgin oil obtained
is then stored in our storage cellar; afterwards it is craftly packaged
in the company.
From this careful
selection of fruits and its attentive manufacturing spring up "Goccia
Iblea" and "Goccia Iblea D.O.P.- Monti Iblea- sub area
Gulfi", an extra virgin olive oil that has high organoleptic qualities.
"Goccia Iblea" exalts any flavour, because it is suitable
to dress any kind of dish, both the simplest and the most complicated.
"Goccia Iblea D.O.P."'s smell opens in an elegant and complex
way; it has a strong vegetable charge, characterized by aromatic herbs and
slight smells of raw tomato.
Into the mouth,
it is wide and harmonic, with scents of wild fruits and fields herbs. The
bitter and hot are strong and greatly balanced at the end. It is excellent
on shellfish salads, first dishes of shellfish and second dishes of oven
cooked fish.
These extra virgin olive oils, basic ingredients of the Mediterranean diet,
are greatly appreciated on salads, they are long lasting and do not saturate
when fried. We suggest to use them also on roasted meat and vegetable salads.
